Cream of Cauliflower Soup

Cream Of Cauliflower Soup

Ingredients:

  • 440ml Ensure® Plus Advance vanilla flavour
  • 500g cauliflower, chopped
  • 150g potatoes, peeled & chopped
  • 200g onions, chopped
  • 25g butter
  • 2 chicken or vegetable stock cubes
  • 160ml whole milk
  • 150ml double cream
  • 10g curry powder
  • 15ml olive oil

Method:

  1. Put the cauliflower, potatoes and onion in a large saucepan with the butter and oil. Gently heat the contents until they start to sizzle, then cover with a lid and sweat over a low heat for about 10 minutes, stirring occasionally. The vegetables should be softened but not coloured
  2. Pour in the stock and bring to the boil, then pour in the milk and return gently to the boil. Add the curry powder and season to taste, then simmer, uncovered, for 10-15 minutes until the vegetables are soft. Pour in the cream and Ensure® Plus Advance
  3. Blend everything in a food processor or blender, in batches
  4. Serve piping hot

    * Boiling Ensure® Plus Advance may affect some of the nutrient content
