Ensure® Plus Advance Recipe
Cream of Cauliflower Soup
Approximate nutrient content per serving
2 bottles of Ensure Plus Advance vanilla (440ml)
Cauliflower, chopped (560g)
Potatoes, peeled & chopped (150g(
Onions, chopped (200g)
Chicken or vegetable stock cubes x 2
Whole milk (160ml)
Double cream (150ml)
Curry powder (10g)
Olive oil (15ml)
1. Put the cauliflower, potatoes and onion in a large saucepan with the butter and the oil. Gently heat the contents until they start to sizzle, then cover with a lid and sweat over a low heat for about 10 minutes, stirring occasionally. The vegetables should be softened but not coloured.
2. Pour in the stock and bring to the boil, then pour in the milk and return gently to a boil. Add the curry powder and season to taste, then simmer, uncovered, for 10-15 minutes until the vegetables are soft. Pour in the cream and the Ensure Plus Advance.
3. Blend everything in a food processor or blender, in batches.
4. Serve piping hot.
