Duck a L’Orange

Ingredients:
- 1 bottle of Nepro® HP vanilla (220ml)
- Plain flour (20g)
- 2 teaspoons of pepper
- 4 large duck breasts
- White wine (25ml)*
- 1 teaspoon of dried parsley
- 1 bay leaf
- 4 heaped teaspoons of orange marmalade
- 2 tablespoons of oil
Method:
- In a small bowl, combine the flour and pepper
- Lightly dust the duck in the flour and pepper mixture
- In a large pan, heat the oil over a medium heat and fry the duck until cooked
- In a saucepan, mix together Nepro®HP, wine, parsley, bay leaf and orange marmalade and simmer for 20 minutes (do not boil)
- Pour the Nepro® HP mixture over the duck
