Fish Risotto

Ingredients:
- 1 bottle of ProSure® vanilla (220ml)
- 1 cup of uncooked brown rice
- 1 can condensed Cream of Mushroom soup (295g)
- 1 can condensed Cream of Chicken soup (295g)
- 1 packet of Onion Soup Mix
- Skimmed milk (120ml)
- Water (250ml)
- Fresh Cod Fillets (900g)
- 1 tablespoon of parsley, finely chopped
- 1 tablespoon of dill, finely chopped
Method:
- Preheat the oven to 170°C / 325°F / Gas Mark 3
- Grease a 22 x 33cm baking dish
- Sprinkle the uncooked rice over the bottom of the baking dish
- In a saucepan, heat the cream of mushroom soup, cream of chicken soup, ProSure®, skimmed milk and water until the mixture is creamy and hot (do not boil)
- Pour the heated soup mixture over the rice
- Sprinkle the onion soup mix over the top
- Cover and bake for 2 hours
- After 2 hours uncover the mixture and place the fish fillets on top
- Sprinkle the parsley and dill over the fish
- Cover and return to the oven for a further 30 minutes
- Serve with a slice of lemon to garnish
