Nepro® HP Recipe

Strawberry Cheesecake

Serves 8

For the biscuit base:

  • Unsalted butter (60g)
  • Digestive biscuits (120g)
  • Caster sugar (90g)

For the topping:

  • 1 bottle of Nepro® HP strawberry (220ml)
  • Cold water (40ml)
  • Gelatine (15g)
  • Full fat cream cheese (360g)
  • Granulated sugar (30g)
  • Strawberries to decorate (24g)


For the biscuit base:

  1. In a small saucepan, melt the butter over a medium heat
  2. Remove the pan from the heat
  3. Crush the digestive biscuits and add to the saucepan along with the caster sugar and mix thoroughly
  4. Pour into a greased baking dish
  5. Chill for approx 30 minutes

For the topping:

  1. In a small saucepan, add the water, sprinkle the gelatine and leave until it forms a sponge-like texture
  2. Place the water and gelatine on a low heat and stir well until the gelatine has completely dissolved
  3. Using an electric mixer, beat the cream cheese and granulated sugar
  4. Strain the gelatine into the cream cheese, stirring constantly
  5. Using a blender, whip the Nepro® HP and fold into the cheese mixture
  6. Pour the Nepro® HP mixture onto the biscuit base and chill in the fridge for a least 3 hours before serving
