Vanilla and White Chocolate Mousse

Ingredients:

220ml Ensure Plus Advance vanilla

200g White Chocolate

1/2 tsp Vanilla Extract

250ml Fresh Cream

20g Raspberries (to garnish)

50ml Fresh Cream (to garnish)

Method:

  1. Bring a saucepan of water to the boil.
  2. In a large, heatproof bowl, break the chocolate into pieces and place the bowl on top of the saucepan.
  3. As the chocolate begins to melt add Ensure Plus Advance and vanilla extract.
  4. When all the chocolate has melted and the mixture is smooth, remove from the heat and leave to cool for 10 minutes.
  5. In a separate bowl, whip the cream until it forms stiff peaks.
  6. Gently fold the chocolate mixture into the whipped cream.
  7. Leave to set in the fridge overnight.

Serving suggestions:

  • Serve with berries and cream.
