Bailey’s Cheesecake

Ingredients:
- 2 packs of Ensure® Plus Crème vanilla (250g)
- Butter (100g)
- Digestive biscuits, crushed (250g)
- Cream cheese (350g)
- Bailey’s® Irish Cream (50ml)*
- Icing sugar (100ml)
- Double cream, whipped (300ml)
Method:
- In a medium saucepan, melt the butter on a high heat
- Add the digestive biscuits and mix together, using a wooden spoon
- Line an 18cm baking tin (one with a removable bottom) with greaseproof paper
- Place the biscuit mixture in the baking tin and flatten down with the palm of your hand
- Place the biscuit base in the fridge to set
- In a large mixing bowl, beat together the Ensure® Plus Crème, cream cheese, Bailey’s® and icing sugar, using a wooden spoon
- Gently fold in the cream and pour over the cooled biscuit base
- Cool in the fridge for at least 2 hours before serving
